On The Menu: Oatmeal Cake with Coconut Frosting
My great-aunt used to make the most delicious oatmeal cake that she would bring to family gatherings. I have tried several times over the years to recreate her recipe with no such luck. This cake although different is equally delicious with its amazing coconut frosting. Serious make this cake if for no other reason so you can eat this frosting. This cake is not the prettiest dessert you can make but it is an easy, simple recipe and you will find it hard to stop eating at one piece.
Ingredients:
Cake
1½ cups hot water
1 cup old fashioned oatmeal
1 cup brown sugar
1 cup white sugar
½ cup butter, at room temperature
2 eggs
1⅓ cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
½ teaspoon salt
Frosting
½ cup butter
1 cup brown sugar
1 tablespoon milk
1 cup coconut
Directions:
1. Preheat the oven to 350°F. Spray a 9x13-inch baking dish with nonstick cooking spray.
2. Combine the water and the oatmeal and allow to soak while you prepare the remaining ingredients.
3. Cream together the butter and both sugars. Beat in the eggs. In another bowl, mix together the flour, cinnamon, baking soda and salt. Add half of the flour to the creamed butter mixture, followed by the soaked oatmeal, then the remaining flour, mixing between additions. Pour into the prepared baking dish and bake until set, 35-40 minutes.
4. For the frosting, turn the oven to broil. Combine the butter, brown sugar and milk in a saucepan. Bring to a boil, while stirring. Boil for one minute. Stir in the coconut. Pour over the cake, spread, then broil for one minute.
