These are not your typical lemon bars but they are unbelievably delicious. Our mom used to make huge containers of these to send back with us whenever we came home from college. For the longest time these were easily Jessica's favorite treat.
Ingredients:
Base
1 Package Lemon Cake Mix
1/4 Cup Melted Butter
1 Egg
Topping
1 Container Vanilla Frosting
1 (8 oz) Cream Cheese
1 Egg
Directions:
1. Preheat oven to 350 degrees.
2. Grease and flour a 13x9 baking pan.
3. Pour all base ingredients into large bowl.
4. Mix on low speed until crumbly.
5. Reserve 3/4 cup of mixture.
6. Press the remaining base mixture into the baking pan.
7. Mix the topping ingredients together on low speed until well mixed.
8. Pour topping onto the base.
9. Spring reserved base onto the topping.
10. Bake for 35-45 minutes or until edges are lightly golden brown and center is firm to touch.
11. Cool completely.
11. Store in refrigerator.
