Lemon Cookies

These cookies are extremely soft and moist. They smelled absolutely heavenly baking. And we love how cute they turned out.

Ingredients: 1 (18.25 ounce) package of lemon cake mix
2 eggs
1/3 cup vegetable oil
confectioners' sugar

* There are extra ingredients in the picture that were for a glaze that we made for the cookies but after making the glaze we didn't like it and decided to just dust the cookies with powdered sugar.

Directions:

1. Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with foil.
2. Mix together cake mix, eggs, and vegetable oil. 2. Drop by rounded teaspoons onto baking sheets and bake for no more than 8 minutes.
3. Dust with powdered sugar.

While we are total chocolaholics these easy lemon cookies were a nice change of pace. Plus, they are so simple anyone can mix them together and soon have amazing smells coming from their kitchen.
