During the winter we want more hearty homemade food and casseroles fill that desire. This casserole is simple to put together and when paired with a couple veggies makes a delicious meal. There's just something about the fall and winter months that make me want to have a warm meal at my kitchen table way more than in the summer.
Ingredients: 1 package veggie crumbles or 1 pound 96% lean ground beef
1 onion, chopped
16 oz. tomato sauce
1/2 teaspoon dried basil
1 tablespoon Italian seasoning
15 oz. refrigerated buttermilk biscuits (We use 2 of the 7.5 oz cans)
2 cups part skim milk mozzarella cheese, shredded
Optional: Veggie Toppings (mushrooms, peppers, olives, pepperoni) (Just be sure to cook or microwave your veggies first in order to remove the water)
Directions:
1. Preheat oven to 350 F. In skillet, brown meat or veggie crumbles over medium heat with the onion. 2. Put sauce into a large bowl. Add quartered biscuits; stir gently until biscuits are covered with sauce. Add in spices. 3. Stir in veggie crumbles and any other cooked veggies you are adding to the biscuits and sauce. 4. Spoon mixture into a 9x13 inch baking dish coated with cooking spray. Bake for 25 minutes. 5. Sprinkle with cheese, and bake an additional 10 minutes or until biscuits are done. Let stand 5 minutes before serving.
